An obstinate and mysterious coffee. This coffee has a scent of liquorice, cinnamon and clove. A fruity taste with a long rich aftertaste of caramel and liquorice. An excitingly, adventurously, earthly and spicy coffee for a real daredevil.
The Koptan Gayo coffee is a 100% Arabica coffee of the types Typica, Catiomor and Tim Tim. It grows at a farm in the province of Ateh, in the north of Sumatra. The Koptan Gayo is biological certified. The coffee grows in an area with a height between 1300 and 1500 meters. Due to the high location, it can only be harvested by hand.
After picking the ripe coffee berries, they are sorted out and depulped. This depulped coffee is fermenting in a water bath and then placed in the sun to dry. This is fermenting according to the wet method. After this process the coffee goes to a processing station, where the pergamino shell around the coffee bean gets removed. Only the beans are left over then. After checking all the beans, they get shipped.
