A sweet, fruity coffee with an aftertaste of chocolate. Delicious as a cappuccino or latte macchiato.
The Juan Marco El Palto, El Palto for short, is a 100% Arabica coffee of the types Catimor, Caturra and Typica. It is grown on several small farms in El Palto, North Peru. The farm is situated between 1300 and 1600 meters altitude. Because of this, the coffee berries can only be harvested by hand.
The berries are picked between June and August. After picking the berries, they are getting processed according to the wet method. This means that the berries are washed immediately after picking in a large water tank. The ripe berries sink to the bottom and the unripe remain floating and can be filtered out. Then the flesh is removed from the kernel in a pulp machine. The beans may then continue fermenting in a water bath. After this process the beans are washed again to wash away the last mucus layer before the beans are laid to dry. This process takes about 2 weeks.
